Background

Curdlan is a polysaccharide produced by bacteria, mainly composed of glucose units connected by β-1, 3-glucoside bonds, with good water solubility and the ability to form gels, and is mainly used as thickeners, stabilizers and gels in the food industry. Studies have shown that Curdlan also has immunomodulatory and anti-tumor potential biological activity.
